Zamora boasts what is possibly one of the widest selections of meat on the Castillian plateau. Its succulent spring lamb, with its tender texture and delicate flavour is a true classic that dates back to time immemorial, and a delicacy that no one wishing to discover Zamora's culinary delights should miss out on. Yet mention must also be made of the Aliste veal, so tender it simply melts in the mouth thanks to the fact that this cattle has been fed exclusively on maternal milk and the pastures of western Zamora.
When it comes to cured meats, Zamora's chorizo sausage is an exquisite combination of minced pork marinated with paprika and aromatic spices. Pure tradition that needs no new additions, as it continues to take pride of place on our everyday table.
